It’s the end of September and I’m still leaving summer mode. Does anyone feel like they can’t take a break from the morning alarm clock to bedtime? I do my best to balance school, work, and social life, but that doesn’t always leave enough time for the things my body needs, like healthy meals. However, one thing I learned this month is that having a healthy dinner doesn’t have to be time consuming. Sure, I’m dying to take an hour or two to cook homemade pumpkin noodles, but simple chicken pan recipes have been more of my style lately. Fortunately, they don’t skimp on taste.

Tin pan recipes are honestly only the best. They make it easy to prepare healthy meals for one or the whole family. Personally, I’ve never been good at deciding how much food to cook, so these sheet pan recipes are amazing when preparing dinner for all of my roommates. My favorite part about a sheet pan recipe? You do all of the prep, and once it’s in the oven you’re basically done. I have the freedom to work, relax, or hang out with friends while the stove does all the work. As soon as the timer rings, dinner will be on the table in five minutes.

Why we love it: Camille reminds us that the key to making a recipe more complex (with just a few ingredients) is how you season it. This meal is based on boneless, skinless chicken breast, peppers, and onions, but the pre-made taco seasoning mix is ​​the secret ingredient that brings it all together and makes these fajitas anything but boring. This seasoning pack is full of all of the same herbs and spices I would mix myself, but much faster.

Why we love it: Even if this meal requires a little more preparation (you’ll need to make the breading and hot honey mustard), it’s a guaranteed crowd-pleaser. This is one of those dinners that it looks like you’ve spent all day making it when it really comes together in just 40 minutes. The flavors are southern, rich, and undoubtedly delicious.

Why we love it: Curry lovers, this is one of my favorite ways to curb my cravings without ordering or eating out. Both the chicken and green beans will get perfectly crispy and taste delicious together. I never thought it could be so easy to achieve flavors like this. To make this recipe even easier, I use a bag of frozen brown rice instead of white rice as I don’t have a rice cooker. This takes about 40-45 minutes to cook, which in my eyes means 40-45 minutes to end my day.

Why we love it: I think I could eat this every night. Making a Szechuan sauce from scratch seems intimidating at first, but I would describe my pantry and spice rack as pretty amateurish, and even I had all the ingredients on hand. This recipe is also great for meal prep as it is best if the chicken is marinated overnight (although it will still taste great after a few minutes). I like chopping up the Brussels and marinating the chicken on Sunday evening, and then pickling it after a particularly Monday-like Monday.

Why we love it: I love all of The Defined Dish’s recipes because no matter how difficult they look, they’re almost always foolproof. This recipe is no exception, even if it looks like it comes from a five-star restaurant. It has carrots, cauliflower, onions, and Brussels sprouts which all give you veggies, but my personal favorite part is the drizzle of lemon aioli on top … I could swim in that sauce.

Why we love it: I love a good greek moment. I will never forget my first trip to Greece when I ordered a Greek salad and shook my world. I’ve never made anything that tastes better than queso in a glass anyway. (PS: have you tried Sietes non-dairy queso? I’m obsessed).
